Greetings!

I hope you're enjoying the summer. It is definitely in full swing with blue skies, hot temperatures and people everywhere!

I must say summer is my favorite time of year and when I feel most alive. A few of my favorite things: I eat lighter foods and feel great, I need less sleep and have more energy, I am active and spend a lot of time outdoors, and to boot I have a fun summer wardrobe for all the social activities! What a winning combination - I wish the season was longer!

Have you noticed that in the summer we naturally crave more raw foods? These foods have a cooling effect on the body. They are light, high in water, fiber and vitamin content work together to act as our internal A/C during the warm months. This time of year we need less dense, high-energy food because we get so much energy from being outside in the fresh air and sunshine.

There is no better season to have fun creating your own fresh, tasty and creative food combinations. By simply tossing together several of your favorite fruits or raw veggies, naked or with a light dressing or topping, you have a perfect meal for a hot summer's day. It's light, easy and beats spending time cooking in a hot kitchen. Plus, the the possible combinations are endless. Fresh herbs are a wonderful option to mix in salads or put on top of fruit as they are packed full of flavor. Experiment with adding different forms of protein to your fruit or salads, such as nuts, seeds, cottage cheese, beans, tofu, fish or poultry. Pick up a light and healthy dressing at your local health food store, or mix up something easy. What fresh fruit and vegetables haven't you tried before? Buy some different shapes and colors and see what you come up with. Whatever you choose, have fun with your food and stay cool. Happy summer!

Recipe of the month:

Chilled melon, Cucumber, and Coconut Soup

As seen in July 2007 Oprah magazine.

1 honeydew,peeled,seeded, and cut into large chunks

1 medium cucumber, peeled, seeded, and cut into chunks

3/cup low-fat coconut milk

1/cup shaved unsweetened coconut,lightly toasted

In a blender or a food processor fitted with a knife blade, combine honeydew,cucumber, and coconut milk;puree until smooth. Cover and refrigerate until chilled. Top with roasted coconut before serving.
Makes 4 to 6 servings

**I found this very refreshing and added some toasted sunflower seeds( or whatever you fancy) for added flavor and protein.
